Brioche, also known in some regions as Sharik, is a classic French pastry-like bread. It’s made mainly from flour, enriched with ingredients such as oil or butter, yeast, milk, and sometimes sugar.

Ingredients

Brioche (Sharik)

 

  • 4 cups flour (sifted)

  • ½ cup warm water

  • ½ cup milk

  • ¼ cup corn oil + 2 tablespoons butter (or simply ½ cup oil if no butter available)

  • 2 beaten eggs

  • 1 tablespoon active dry yeast

  • A pinch of vanilla

  • ½ teaspoon salt

  • 1 teaspoon baking soda

  • 1 tablespoon sesame seeds

  • 1 cup sugar (optional, if you want a sweet version)

For brushing:

  • 1 egg yolk beaten with a little milk

  • Optional topping: sugar, sesame, or grated coconut


Preparation

  1. Make the Dough Base

    • Dissolve the sugar in the milk until smooth.

    • Add the beaten eggs, vanilla, oil, and butter. Mix until combined.

  2. Add Dry Ingredients

    • Gradually add the sifted flour, mixing as you go.

    • Stir in sesame seeds, baking soda, and yeast (after testing the yeast by dissolving it in warm water with a little sugar).

    • Knead the dough well until it becomes soft and elastic.

  3. First Rise

    • Cover the dough and let it rest in a warm place for about 1 hour, until it doubles in size.

  4. Shape the Brioche

    • Divide the dough and shape into braids or rolls.

    • Place on a baking sheet lined with parchment paper.

    • Let rise again for about 30 minutes.

  5. Bake

    • Brush the tops with the egg yolk and milk mixture. Sprinkle with sugar, sesame, or coconut, if desired.

    • Bake in a preheated oven at 180°C (350°F) until golden brown.
