Cauliflower Soup – Recipe and Preparation Method

Ingredients (Serves 4)

Cauliflower Soup

 

  • 500 g cauliflower, cut into pieces

  • 2 tablespoons tahini

  • ¼ teaspoon sweet spice

  • 2 teaspoons salt (adjust to taste)

  • 20 sprigs fresh coriander

  • ¼ teaspoon white pepper

  • 150 g tomato paste

  • 80 g soybean oil

  • 120 g onion

  • 2 garlic cloves

  • 2 liters water

  • 1 chicken bouillon cube

  • ½ cup light cooking cream


Preparation Method

  1. Peel and finely chop the onion. Sauté it in soybean oil in a large pot until soft.

  2. Chop the coriander, add it along with the garlic to the pot, and stir briefly.

  3. Add water and the bouillon cube, bring to a boil, then add the cauliflower pieces.

  4. Cover and simmer over low heat for about 20 minutes, until the cauliflower is tender.

  5. Remove from heat and stir in the cooking cream, tomato paste, and tahini. Return to low heat, add salt, spices, and white pepper, and stir until well combined.

  6. Meanwhile, cut bread into small cubes and toast in the oven until golden brown.

  7. Serve the soup hot in bowls, garnished with toasted bread cubes and wild thyme for extra flavor.
