Ingredients (Serves 5)

Cheese and Hazelnut Tart

 

  • 175 g flour

  • 100 g unsalted butter, cut into pieces

  • 2 tablespoons powdered sugar

  • 1 egg yolk

  • 125 g apricot jam

  • 150 g cream cheese

  • 100 g fine sugar

  • 160 g roasted hazelnuts, chopped

  • 170 g clotted cream

  • 2 eggs

  • 1 tablespoon vanilla extract


Preparation Method

  1. Start by mixing the powdered sugar and egg yolk in a blender until the mixture comes together into a soft dough.

  2. Roll the dough out on a floured surface to fit the base and sides of a tart pan, then refrigerate for about 15 minutes.

  3. Preheat the oven to 200°C (392°F) and bake the dough until set.

  4. Spread the apricot jam evenly over the baked crust.

  5. In a separate bowl, beat the cream cheese and sugar until smooth. Add the remaining ingredients and mix well until combined.

  6. Pour the cream mixture evenly over the crust.

  7. Bake in the preheated oven for about 30 minutes, until the cream mixture is firm.

  8. Once baked, refrigerate the tart for at least 3 hours before serving.
