Ingredients (Serves 4)

Chicken Stew with Vegetables and Rice

 

  • 1 kg fresh chicken breast

  • 1 large onion, sliced

  • 500 g basmati or regular rice

  • ½ cup sweet corn

  • ½ cup mushrooms, finely chopped

  • ½ cup green peas

  • 2 medium carrots, diced

  • Salt and black pepper, to taste

  • Spices: ground anise, ground ginger, 1 tsp cinnamon

  • Mixed spice blend

  • 1 tbsp fresh lemon juice

  • 150 ml white vinegar

  • Vegetable oil


Preparation

Step 1 – Prepare the chicken:
Wash and clean the chicken breasts thoroughly, then pat dry and cut into small cubes. Place them in a bowl and marinate with vinegar, lemon juice, soy sauce, ground ginger, black pepper, salt, and a little cinnamon, cardamom, and clove. Leave to absorb the flavors—marination is key to rich taste.

Step 2 – Cook the vegetable base:
Cut all vegetables (mushrooms, peas, corn, onions, carrots) into very small cubes for even cooking. Heat oil in a large pot over medium heat. Add the vegetables and sauté lightly until they absorb some oil but do not brown. Remove the vegetables and set aside in a strainer.

In the same pot, add the marinated chicken and fry until it starts to brown. Return the sautéed vegetables to the pot, add water, and let everything simmer together until the chicken is cooked through.

Step 3 – Prepare the rice:
Wash the rice thoroughly and drain. In a separate pot, heat a little oil with vermicelli (optional) until golden, then add the rice and stir for about 5 minutes. Add enough water to cover, season with a pinch of salt, and let simmer until the rice is fully cooked.
