Chinese Chicken with Vegetables – Recipe & Preparation
Welcome to today’s dish! We’re preparing Chinese Chicken with Vegetables, one of the staple dishes in Chinese cuisine. What makes this dish special is its rich seasoning and the mix of colorful vegetables, giving it a unique flavor and a vibrant look.

Ingredients (Serves 5)

500 g chicken breast, cut into strips or cubes

2 tbsp fresh ginger, grated

Juice of 3 lemons

2 tbsp soy sauce

4 garlic cloves, finely minced

1 tsp black pepper

1 medium onion, sliced

4 medium carrots, julienned

3 zucchinis (courgettes), julienned

1 bell pepper of each color (red, yellow, green, orange), sliced

½ cup mushrooms, sliced

6 leaves red cabbage, shredded

6 leaves white cabbage, shredded

Celery stalks, sliced

500 ml olive oil (or vegetable oil)

White vinegar (to taste)
Preparation
Step 1 – Marinate the chicken:
In a bowl, combine vinegar, garlic, ginger, lemon juice, soy sauce, salt, and pepper. Add the chicken cubes and mix well. Let the chicken marinate long enough for the flavors to be absorbed (at least 30 minutes; longer if possible).
Step 2 – Prepare the vegetables:
Slice the onion, cabbage, carrots, zucchini, bell peppers, and celery into thin strips. Keep mushrooms sliced.
Step 3 – Stir-fry:
Heat oil in a large wok or deep pan. Add the onion slices and sauté until golden. Add the carrots and stir-fry until slightly tender. Next, add zucchini, bell peppers, mushrooms, and finally the cabbage and celery. Stir continuously so the vegetables remain crisp yet cooked.
Step 4 – Cook the chicken:
In another pan, fry the marinated chicken until golden and its juices evaporate. Add the chicken to the stir-fried vegetables. Mix everything well and let the flavors blend together for a few minutes.
