Damask Rose Jam – Recipe & Preparation Method

Damask rose jam is a unique type of preserve made not from fruit, but from flowers. It is especially prized for its delicate, aromatic flavor.

 Ingredients (Serves 10)

 
Damask Rose Jam

  • 1 kilogram fresh Damask rose petals

  • ¼ cup dried Damask rose petals

  • 3 grams pectin

  • ½ cup fresh lime juice

  • 6 cups water


Preparation Method

  1. Infuse the dried petals:
    Place the dried rose petals in hot water for about 5 minutes to release their flavor.

  2. Prepare the fresh petals:
    In a separate bowl, add the fresh rose petals and lime juice. Rub them together until the petals soften and release their natural juices. Strain to extract the rosy liquid, and set this aside.

  3. Cook the mixture:
    Place the softened rose petals into a pot with pectin and water. Cook gently over low heat.

  4. Sweeten:
    Once the mixture begins boiling, wait about 10 minutes, then add sugar. Continue simmering until the sugar dissolves completely and the mixture thickens.

  5. Finish with rose extract:
    Remove the pot from heat, add the strained rosy liquid, and stir well. Place the pot briefly in a cold-water bath to help preserve the dark pink color of the jam.

  6. Store:
    Pour the jam into thoroughly dry, sterilized glass jars. Seal tightly and refrigerate until ready to serve.
