Eggplant Jam – Recipe and Preparation Method
Eggplant jam is one of the unique and delicious jams, made from eggplant, a vegetable widely used in many dishes. While eggplants are usually eaten fried or grilled, turning them into jam has become a favorite for many people.
Eggplant is an herbaceous vegetable with many health benefits. To give you an idea of its nutritional value: every 100 grams contains about 89.67 g water, 85 calories, 0.83 g protein, 0.23 g fat, 8.73 g carbohydrates, and 2.5 g dietary fiber.
Its benefits include reducing cholesterol levels in the blood, preventing the spread of cancer and serving as a protective food against it, and calming the nerves thanks to compounds like scopoletin and scoparone. Eggplant is also an effective aid for diabetes management, especially type 2 diabetes.
Additionally, it contains vitamin niacin (vitamin B3), which is important for brain and nervous system functions. Because it is rich in sodium and potassium, eggplant also helps regulate blood pressure.
Ingredients for Eggplant Jam

2 kilograms of eggplants

1 tablespoon of alum or lime water (calcium hydroxide solution)

8 cups of sugar (to prepare the syrup)

4 cups of distilled water

1 teaspoon of lemon juice
Method of Preparation

Wash the eggplants thoroughly and peel them.

Slice each eggplant lengthwise through the middle.

Place the eggplants in a deep pot, add alum or lime water, and leave them for one hour, stirring occasionally so they absorb it evenly.

Rinse the eggplants well to remove all traces of alum/lime water, then boil them briefly in water.

Remove from the heat, let them cool, then squeeze each piece thoroughly to drain excess water.

Prepare the syrup by mixing the water and sugar in a pot over heat until it thickens.

Add the eggplants to the syrup, let the mixture boil, and skim off the foam as it appears.

Once the eggplants turn golden in color, add the lemon juice and let it boil for a few more minutes.

Remove from the heat and allow the jam to cool.

Transfer into completely dry glass jars, seal tightly, and store in the refrigerator until ready to serve.
This special jam can then be enjoyed by the family for its distinctive flavor.
