Fettuccine with Shrimp – Recipe & Preparation

Welcome to today’s dish! We’re preparing Shrimp Fettuccine, one of the most beloved pasta recipes on the Italian table. This dish stands out for its combination of tender shrimp and a lightly spicy tomato sauce (you can leave out the chili if you prefer a milder taste).

Ingredients (Serves 4)

Fettuccine with Shrimp

 

  • 500 g fettuccine pasta, boiled and drained

  • 1 kg shrimp (prawns), cleaned and peeled

  • 1 red chili pepper, deseeded and finely sliced

  • 1 tbsp olive oil

  • 1 onion, thinly sliced

  • 2 garlic cloves, minced

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 cup chopped tomatoes

  • 1 tbsp tomato paste

  • 1 cup white vinegar

  • 1 chicken stock cube

  • 2 tbsp fresh coriander, chopped

  • 1 tbsp black pepper

  • 2 tsp salt


Preparation

Step 1 – Cook the pasta:
Bring a large pot of salted water to a boil. Add the fettuccine and cook for 20–25 minutes until tender. Drain and set aside.

Step 2 – Make the sauce:
In a large pan, heat olive oil over medium heat. Add onion, chili pepper, garlic, and spices (cumin, coriander, black pepper, and salt). Sauté for 5 minutes until fragrant and golden.

Add the chopped tomatoes, tomato paste, and vinegar. Stir well, then add the chicken stock cube dissolved in water. Let the sauce simmer gently for 30–35 minutes, stirring occasionally, until it thickens.

Step 3 – Add the shrimp:
Five minutes before turning off the heat, add the shrimp. Stir gently so they cook evenly without breaking apart. Shrimp cook quickly and should turn pink and tender.

Step 4 – Combine & Serve:
Toss the drained fettuccine into the sauce, mixing until the pasta is coated. Serve hot, garnished with fresh coriander and a squeeze of lemon juice.
