Fish Maqluba – A Seafood Twist on a Middle Eastern Classic 🐟🍚
Maqluba, meaning “upside-down,” is a traditional Middle Eastern dish prepared with layers of rice, vegetables, and meat or chicken. This version—Fish Maqluba—is perfect for seafood lovers. It combines tender fish, golden fried eggplant, cauliflower, and spiced rice, all flipped upside-down into a stunning layered dish.
Ingredients
-
Fish (fillets or whole pieces, cleaned)
-
Rice
-
Eggplant (sliced into 2 cm rounds)
-
Vegetable oil
-
Cauliflower florets
-
Butter
-
Onion
-
Garlic
-
Pine nuts
-
Chicken broth (or fish stock)
-
Mixed spices (to taste)
Preparation
Step 1: Prepare the Rice
-
Soak the rice for about 30 minutes.
-
Mix with spices of your choice and set aside for 15 minutes to absorb the flavor.
Step 2: Fry the Vegetables and Fish
-
Sprinkle salt over the eggplant slices to draw out moisture, then pat dry. Fry until golden brown on both sides.
-
Fry the cauliflower florets until lightly golden—remove before fully cooked and set aside.
-
Fry the fish pieces until golden, then set aside.
Step 3: Build the Layers
-
In the same pot, melt some butter over medium heat. Add chopped onion and garlic and sauté until fragrant and translucent.
-
Add a small portion of rice and stir gently with the onion mixture.
-
Start layering: first eggplant slices, then half the fried fish, then a layer of rice. Add cauliflower, the remaining fish, and finally cover with the rest of the rice.
-
Pour in enough chicken broth (or stock) to cover the rice completely.
Step 4: Cook
-
Cover the pot and cook over medium heat for about 25 minutes, or until the rice is fully cooked and fluffy.
Step 5: Garnish and Serve
-
In a separate pan, fry sliced onions with pine nuts until golden.
-
Carefully flip the pot of maqluba upside-down onto a large serving dish.
-
Garnish with the fried onions and pine nuts.
