Fried Chicken – How to Cook Egyptian-Style Fried Chicken
Chicken is one of the most delicious types of poultry enjoyed by people all over the world. Its meat is rich in important nutrients, especially protein, which is essential for the health of the body and skin.
There are many ways to prepare chicken, and all of them are tasty in their own way. Among the special Egyptian dishes is fried chicken, a favorite for many. It can be served with rice or pasta, depending on preference. Today, we’ll show you how to prepare Egyptian-style fried chicken.
Ingredients for Egyptian-Style Fried Chicken

1 large chicken

6 cardamom pods

2 tablespoons ghee (clarified butter)

1 teaspoon salt

½ teaspoon black pepper

2 bay leaves
-
2 mastic grains
-
1 onion
-
1 tomato
How to Cook Egyptian-Style Fried Chicken

First, wash the chicken thoroughly and clean off any small feathers.

In a large pot, bring water to a boil. Place the whole chicken inside without cutting it.

Add the cardamom, mastic, salt, black pepper, and bay leaves to the water. Squeeze the tomato before adding it, and add the whole onion as well.

As the water boils, foam (scum) will form on the surface. Skim it off regularly with a spoon.

Once the foam is removed, cover the pot and let the chicken cook over medium heat for at least one hour, or until done. To test, insert a knife into the meat — if blood appears, it needs more time; if it comes out clean, the chicken is cooked.
Tip: Keep some water in the pot, as it can be used later as broth. -
Remove the chicken from the pot and drain well.

In a pan, heat the ghee until hot. Place the chicken in the pan and turn it on all sides until it becomes golden brown.

Remove the chicken, place it on a serving dish, sprinkle with a little salt and pepper, and serve.
