Fried Silybum – Recipe & Cooking Method
Fried silybum is a traditional dish commonly prepared in the Mediterranean region, where the plant grows abundantly. This herb is also known by several names, including milk thistle, globe artichoke thistle, Gundelia, and “Christ’s thorn.”
It is mostly enjoyed during the spring season, which is the natural growth period of this nutritious plant.

Ingredients (Serves 2):

1 kilogram of fresh silybum (thistle shoots)

1 egg

½ cup flour

½ cup breadcrumbs

¼ cup water
-
1 teaspoon salt

1 teaspoon black pepper

1 lemon
-
2 cloves garlic
-
Cooking oil for frying
Preparation Method:

Clean the plant: Remove the thorns carefully and wash the stalks thoroughly.

Prepare the coatings: Place the flour in one bowl, breadcrumbs in another, and beat the egg with salt and black pepper in a third bowl.

Coat the shoots: Dip each piece of silybum first in flour, then in the egg mixture, and finally coat with breadcrumbs. Repeat until all the shoots are ready.

Fry: Heat a moderate amount of oil in a pan. Once hot, fry the coated shoots until they turn golden brown. Remove and place on a plate, then continue with the rest until all are cooked.

Prepare the sauce: In a small bowl, squeeze the lemon juice, crush the garlic, add a pinch of salt, and mix well.

Serve: Arrange the fried silybum on a serving plate, place the garlic–lemon sauce on the side, and serve warm.
