Kabab El Halla – Egyptian Beef Stew Recipe & Preparation –Traditional Egyptian Pan-Fried Beef with Onions
Kabab El Halla is one of Egypt’s most iconic beef dishes—considered by many to be one of the tastiest meals in Egyptian home cooking.
The secret of this dish lies in slow cooking: letting the beef simmer gently until tender and infused with the sweetness of onions. Although it takes some time, the rich flavor and melt-in-your-mouth texture make it worth every minute.
It is typically served hot with fresh bread and tahini salad, or alongside rice—depending on preference.
Ingredients (Serves 4–5)

1 kg beef, cut into medium cubes

5 onions, thinly sliced into rings

2 medium potatoes

2 garlic cloves, finely minced

2 cups beef stock
-
1 tsp black pepper
-
1 tsp mixed spices
-
1 medium tbsp salt
-
½ tsp chili powder (optional)

2 tbsp ghee (clarified butter)

1 piece charcoal (for smoking)
Preparation

Brown the beef:
Heat 1 tbsp ghee in a medium pot. Sear the beef cubes over high heat until browned on all sides. This locks in the juices. -
Prepare the onion base:
In another pot, melt the remaining ghee and sauté the onions until soft and golden. Add the minced garlic and stir well. -
Combine:
Transfer the onion-garlic mixture to the beef pot. Add 2 cups beef stock, black pepper, spices, and salt. Cover and simmer gently over low heat until the meat becomes tender. -
Prepare the potatoes:
Peel and dice the potatoes into medium cubes. Deep fry in hot oil until golden. Drain on kitchen paper. -
Finish the stew:
Once the beef is fully cooked, add the fried potatoes to the pot and stir gently. -
Add smoky flavor (traditional step):
Heat a piece of charcoal over an open flame until red hot. Place it on a piece of onion peel inside the pot. Immediately drop a little ghee onto the charcoal—it will release smoke. Quickly cover the pot with a tight lid for 10 minutes to infuse the stew with a delicious smoky aroma.
