Ingredients (Serves 4)

Kofta and Plum Blossoms

  • 1 tbsp vegetable oil

  • 100 g onion, thinly sliced

  • 400 g ground lamb

  • 2 tsp curry powder

  • 1 tsp ground black pepper

  • 80 ml hot water

  • 2 chicken stock cubes (Maggi or similar)

  • 160 g plums, pitted and finely diced

  • 40 g fresh coriander, finely chopped

  • 1 tbsp orange juice

  • 1 tsp grated orange zest

  • 200 g samosa pastry sheets

  • 125 ml water (for sealing pastry)

For the sauce:

  • 50 g tahini

  • 40 g plain yogurt

  • 2 tsp fresh lime juice

Preparation

  1. Cook the filling:
Heat the oil in a pan and sauté the onions until golden. Add the ground lamb and spices, cooking until the meat is browned and fully cooked.

  2. Add the plums:
Stir in the diced plums, hot water, and chicken stock cubes. Simmer on low heat until the liquid is absorbed and the plums soften. Add orange juice and zest, then remove from the heat.

  3. Shape the blossoms:
Place a spoonful of the filling onto a samosa sheet and fold it into the shape of a flower. Brush the edges with water to help seal the shape.

  4. Bake:
Arrange the pastry blossoms on a baking tray and bake at 200°C (390°F) for about 15 minutes, until golden and crisp.

  5. Prepare the sauce:
While the blossoms bake, whisk together tahini, yogurt, and lime juice until smooth.

  6. Serve:
Once baked, drizzle each blossom with a spoonful of the tahini-yogurt sauce before serving.
