Molokhia with Shrimp – Egyptian Green Soup with Seafood
Today’s recipe is a special combination of two favorites: Molokhia, the famous green leafy soup loved across Egypt, and shrimp, one of the healthiest and most delicious types of seafood. Together, they create a rich, hearty dish known as Molokhia with Shrimp.
Ingredients (Serves 3–4)

500 g small shrimp, peeled and cleaned

750 g fresh molokhia leaves (finely chopped)

1 small onion, finely minced

3 cups water

1 tsp black pepper

1 tsp salt

1 tsp ground coriander

4 tbsp butter
-
2 tbsp garlic, minced
Preparation
Step 1 – Prepare the base:
Finely chop the onion. In a medium pot, melt 2 tablespoons of butter, then add the onion and sauté until soft and translucent.
Step 2 – Cook the shrimp:
Add the cleaned shrimp to the onions and stir-fry for about 5 minutes until they begin to turn pink. Pour in 2 cups of water, then season with black pepper and salt. Let it come to a boil.
Step 3 – Add the molokhia:
Once the broth is boiling, stir in the chopped molokhia. Use a hand whisk to blend it well until the leaves dissolve smoothly into the soup. Remove from the heat immediately once it reaches the right consistency.
Step 4 – Prepare the garlic-coriander mix (tasha):
In a separate small pan, melt the remaining 2 tablespoons of butter over medium heat. Add the minced garlic and sauté until lightly golden, then add the ground coriander and stir for about a minute. Be careful not to burn the garlic or coriander.
Step 5 – Final touch:
Pour the garlic-coriander mixture into the pot of molokhia and shrimp, stir well, and return briefly to the heat so the flavors combine.
✨ Serve hot in deep bowls with white rice or warm bread.
This dish blends the earthy taste of molokhia with the delicate flavor of shrimp, creating a wholesome and comforting meal.
