Om Ali Dessert – Recipe and Preparation Method

Om Ali is one of the most famous desserts in the Arab world, beloved across the region and often served during special occasions, weddings, and holidays.

The origin of Om Ali goes back to the people of Medina in Saudi Arabia, where a similar dish of fried dough (zalabiya) or bread soaked in milk was traditionally served at breakfast or after dawn prayers. During the Ottoman era, when Muhammad Ali Pasha—the governor of Egypt—visited Medina, he tasted the dish, loved it, and asked his chef to learn how to make it. From there, it was brought to Egypt and later spread across the Arab world, becoming a staple dessert.

This dish is not only delicious but also nutritious. Every 300 g serving provides about 465 calories, 10 g protein, 58 g carbohydrates, and 25 g fat.


Ingredients (Serves 8)

Om Ali Dessert

 

  • Baked puff pastry, ready to use

  • 2 cups sweetened milk

  • 1 cup liquid cream

  • ½ small cup rose water

  • A mix of nuts (walnuts, almonds, pistachios – as desired)

  • ½ teaspoon ground cinnamon

  • 1 can clotted cream (qishta)


Preparation Method

  1. In a pot, combine the milk, cream, and rose water. Bring to a boil, then set aside.

  2. Cut half of the puff pastry into pieces and place them in a baking dish. Pour the hot milk mixture over the pastry to soak it.

  3. Add a layer of mixed nuts with a light sprinkle of cinnamon.

  4. Repeat the process with the remaining puff pastry to create a second layer. Again, pour milk over it, then top with nuts and cinnamon.

  5. Mix half a cup of cream with the can of clotted cream. Spread this mixture evenly over the top to cover the dish completely.

  6. Preheat the oven to 160°C (320°F) and bake the dessert for about 15 minutes.

  7. Remove from the oven, garnish with extra nuts, and serve warm.

The result is a rich, creamy, and unforgettable dessert that combines layers of pastry, milk, and nuts—a true Arab classic enjoyed for generations.
