Pomegranate Molasses – Recipe and Preparation Method
Pomegranate molasses is a thick, tangy, and highly beneficial syrup made primarily from pomegranate juice. It is known for its sour taste and the distinctive flavor it adds to many dishes, especially salads like fattoush and grilled meats.
The benefits of this syrup come directly from the fruit itself. Pomegranates are made up of about 84% water, 2% fiber, 3% protein, 10% natural sugars, and 1% citric acid. Thanks to this composition, pomegranate molasses is rich in nutrients and antioxidants.
It helps reduce the risk of cancer, protects against strokes and heart disease, and supports pregnant women by easing childbirth. 4 cups pomegranate juice

⅔ cup sugar

⅓ cup lemon juice
Preparation Method

Make the juice first: Remove the seeds from the pomegranates and place them in a blender. Add sugar and rose water, then blend until smooth. Strain the mixture to obtain fresh pomegranate juice.

Cook the molasses: Pour the juice into a pot, add sugar and lemon juice, and place over low heat. Stir continuously until the sugar dissolves.

Let the mixture simmer for 60–75 minutes, stirring every 10 minutes. Over time, the liquid will reduce and thicken.

To test readiness, dip a spoon into the mixture—if it coats the spoon with a dark, glossy layer, it’s done. Turn off the heat immediately to avoid over-thickening.

Allow the molasses to cool completely, then transfer to a glass jar. Store in the refrigerator for up to one month.
