Potato and Vegetable Pie – Recipe & Cooking Tutorial
Welcome to today’s dish: potato and vegetable pie. This dish belongs to the pastry family and is based on dough and vegetables, making it a balanced and healthy option. Ingredients for Potato and Vegetable Pie

1 kilogram potatoes

Mixed boiled vegetables (sold ready-made)

Green onion or leek, thinly sliced

2 tablespoons butter or ghee

Salt and black pepper

Spices: dried coriander

20 sheets puff pastry or phyllo dough (goulash sheets)

1 egg

50 ml milk
Step 1 – Preparing the Mashed Potatoes
Peel and wash the potatoes well, then cut them into medium cubes. Place them in a pot of water and bring to a boil over high heat for about 20–25 minutes. Lower the heat and let them cook until tender.
Check doneness with a fork — if it mashes easily, they’re ready. Drain and mash while still hot. Now the mashed potatoes are ready.
Step 2 – Preparing the Filling
In a medium pan, melt the butter over medium heat. Add the chopped green onion or leek and sauté until lightly browned. Add the mixed vegetables (such as carrots, peas, chickpeas, and broccoli). If using fresh vegetables, boil them first, then drain and dry before adding.
Stir until fragrant, then add the mashed potatoes. Mix everything well until fully combined. Season with salt, black pepper, and dried coriander to taste. Remove from heat and let cool — the filling is now ready.
Step 3 – Preparing and Baking the Pie
Grease a baking dish suitable for the oven. Layer half the puff pastry or phyllo sheets in the dish, brushing lightly with butter or oil between sheets. Spread the cooled filling evenly over the base, leaving the edges clean. Cover with the remaining sheets and press the edges together to seal.
Beat the egg with milk and brush the top of the pie. Preheat the oven to 180°C (350°F), then bake until the top turns golden brown. Remove from the oven and serve hot.
