Ingredients

Potato Curry Kofta

For the kofta:

  • ¾ kilogram minced beef

  • 2 garlic cloves, finely minced

  • 1 small onion, finely grated

  • Chopped fresh coriander

  • Chopped dill

  • Salt and black pepper

  • Spices: turmeric, ginger, cinnamon, cumin, coriander

For the curry sauce:

  • ½ cup coconut milk or heavy cream

  • 1 red bell pepper, diced small

  • 1 small onion, finely chopped

  • 1 tablespoon lemon juice

  • 50 ml oil

  • 1 medium potato, cut into cubes

  • 3 cups chicken broth

  • ½ teaspoon lemon zest

  • 1 tablespoon flour

  • Salt and black pepper

  • 1 tablespoon curry powder

  • 1 teaspoon ginger

Preparation Method

1. Preparing the kofta:
In a large bowl, combine the minced beef with coriander, dill, garlic, onion, and spices (ginger, cumin, cinnamon, coriander). Add salt and black pepper to taste. Mix thoroughly until everything is well combined.

Tip: Always let seasoned meat rest for a while so the spices infuse their flavor into it.

Shape the mixture into small bite-sized balls. Arrange them on a baking tray. Preheat the oven to 180°C (350°F) and bake for about 10 minutes until the kofta holds its shape. The kofta is now ready.

2. Preparing the curry sauce:
In a pot, heat oil and sauté the onion until golden. Add the red bell pepper, curry powder, and lemon zest, then stir in the flour and mix well.

Pour in the chicken broth and lemon juice, stirring continuously. Raise the heat and bring to a boil. Season with salt to taste.

Add the kofta balls and potato cubes to the sauce. Let everything cook together on medium-high heat for about 15 minutes until the potatoes are tender.
