Potato Kibbeh with Ground Meat – Traditional Recipe & Preparation
Welcome to today’s dish! We’re preparing Potato Kibbeh with Ground Meat, a delicious and hearty variation of the famous kibbeh. This dish combines mashed potatoes and bulgur with a savory meat filling, making it a perfect side dish. It is often served with fresh bread and salad.
Ingredients

1 kg potatoes

4 cups fine bulgur

1 medium onion, sliced

1 cup all-purpose flour

Fresh coriander, chopped

2 tbsp salt and black pepper

1 tbsp dried basil (or dried oregano)

500 g ground beef or lamb

1 cup walnuts, coarsely chopped

5 large onions, finely chopped

2 tbsp sumac

Olive oil or vegetable oil

Clarified butter (ghee)
Preparation
Step 1 – Prepare the potato mixture:

Wash the potatoes and boil them in a pot of water for about 15 minutes until soft. Peel and mash them well.

Soak the bulgur in water for 15–20 minutes, then drain and squeeze out excess water.

In a large bowl, mix the mashed potatoes with bulgur, sliced onion, salt, black pepper, basil, and a touch of cumin. Blend again until smooth—this forms the outer kibbeh dough.
Step 2 – Prepare the filling:

Heat ghee or oil in a pan. Add the finely chopped onions and sauté until golden.

Add ground meat, seasoning with salt, black pepper, mixed spices, cumin, basil, and sumac. Cook until the meat is browned and well combined.

Stir in the walnuts for texture, then remove from heat.
Step 3 – Assemble the kibbeh:

Take portions of the potato mixture and shape them into small round patties.

Place a spoonful of the meat filling in the center, then close and shape into disks or ovals.
Step 4 – Fry:

Heat oil in a deep pan and fry the kibbeh until golden and crispy on the outside.
Step 5 – Serve:

Arrange on a platter, garnish with fresh coriander, and serve hot with bread and salad.
