Potato Kofta – Recipe & Preparation
Welcome to today’s dish! We’re preparing Potato Kofta, a simple, budget-friendly recipe made with everyday ingredients. Crispy on the outside and soft on the inside, these kofta fingers pair perfectly with fresh bread and salad. Let’s get started!
Ingredients (Serves 5)

3 large potatoes

1 onion, finely grated

3 cloves garlic, finely minced

1½ tsp salt

½ tsp black pepper

2 zucchini (courgettes)

Fresh coriander, chopped

Fresh parsley, chopped
-
½ tsp ground ginger
-
2 eggs
-
Cheddar cheese, grated

Breadcrumbs

Vegetable oil
Preparation
Step 1 – Make the Filling

Heat a little oil in a pan over low heat.

Add the grated onion and minced garlic, sauté until golden.

Add the zucchini (courgette), stir until softened, then remove from heat.

Let the mixture cool completely.
Step 2 – Prepare the Potatoes

Boil the potatoes in salted water until tender.

Drain well and mash until smooth.

Mix the mashed potatoes with the cooled onion–zucchini mixture.
Step 3 – Combine the Mixture

Beat the eggs with ginger, salt, black pepper, and chopped coriander.

Add to the potato mixture along with grated cheddar cheese.

Mix thoroughly until everything is well combined.
Step 4 – Shape & Coat

Take small portions of the mixture and shape them into finger-sized koftas.

Roll each kofta in breadcrumbs until evenly coated.
Step 5 – Bake or Fry

Oven option (lighter): Place the koftas on a baking tray lined with parchment, drizzle lightly with oil, and bake under the grill for 8 minutes on each side until golden.

Frying option (crispier): Heat oil in a pan and fry the koftas until golden brown on all sides.
