Rice with Green Beans and Meat (Loubia with Meat)

 

  • 4 cups rice (Egyptian or Basmati)

  • ½ kilogram meat (cut into small cubes)

  • ½ kilogram green beans

  • 1 medium onion (diced)

  • Tomato paste

  • 1 cup water or broth (if using broth, reduce the salt)

  • 50 ml cooking oil

  • Salt and black pepper

  • Ground cinnamon

  • Harissa (chili paste) or hot pepper

  • 1 lemon

  • Fresh parsley


How to Prepare Rice with Green Beans and Meat

  1. Place a suitable pot on the stove and add the oil. Sauté the diced onion until golden.

  2. Add the cubed meat to the pot and fry well, stirring constantly.

  3. Meanwhile, soak the rice in water for 30 minutes before cooking. Drain and add it to the meat and onion mixture. Stir for about 5 minutes until the rice turns light brown and its water evaporates.

  4. Add tomato paste to give the dish a reddish color, stirring well to combine.

  5. Add the spices: cinnamon, black pepper, and salt to taste. You may also add harissa or chili for extra heat. (If using broth instead of water, reduce the amount of added salt since broth already contains some.)

  6. Add water or broth to the pot and stir. Bring to a boil, then lower the heat and let it simmer for about 15 minutes until fully cooked.
    Note: Stir the mixture carefully during cooking to prevent the rice or meat from sticking or burning at the bottom of the pot.

  7. Once ready, garnish the serving dish with lemon slices or fresh parsley.
