Sanjary Fish with Potatoes – Authentic Egyptian-Style Recipe

Fish is one of the most essential meals on the family table thanks to its many health benefits. Today’s dish is Sanjary fish with potatoes, a delicious recipe especially popular in Egyptian coastal cuisine. It’s usually made with mullet (bouri fish) because of its rich, meaty flesh. What makes this recipe special is the Sanjary marinade, a fragrant mix of herbs and spices that gives the fish a unique and irresistible flavor. Let’s get started!


Ingredients

Sanjary Fish with Potatoes

 

Serves 4 people

  • 1.5 kg large mullet fish (cleaned and scaled)

  • 2 large potatoes, thinly sliced

  • 1 medium onion, thinly sliced

  • 1 small carrot, grated

  • 4 large garlic cloves, finely minced

  • 150 ml vegetable oil

  • 1 cup fresh parsley, chopped

  • ⅓ cup fresh cilantro, chopped

  • 1 tablespoon fresh dill, chopped

  • 1 red bell pepper, diced

  • Salt and black pepper (to taste)

  • Spices: cumin, ground coriander, bay leaves, turmeric

  • 1 hot green chili pepper

  • Juice of 1 lemon


Preparation

Step 1: Prepare the Sanjary Marinade

  • In a large mixing bowl, combine cumin, ground coriander, bay leaves, turmeric, salt, and black pepper (about 2 ½ teaspoons of salt and 1 teaspoon black pepper recommended).

  • Add the dill, parsley, cilantro, diced red bell pepper, grated carrot, and sliced onion.

  • Mix in the minced garlic and freshly squeezed lemon juice.

  • Pour in the vegetable oil and mix everything thoroughly until well combined. This mixture will serve both as a marinade for the fish and as a base layer with the potatoes.

Step 2: Prepare the Fish

  • Clean and scale the mullet fish. Make a cut along the back and open it like a book (this is the signature Sanjary style).

  • Rub the fish generously with the prepared marinade, making sure to coat it well inside and out.

Step 3: Assemble the Baking Dish

  • In a baking tray, spread the remaining marinade evenly.

  • Add the potato slices, mixing them with the marinade to coat thoroughly, then spread them out evenly across the tray.

  • Place the marinated fish on top of the potato layer.

  • Allow the tray to rest for about 30 minutes so the fish and potatoes absorb the flavors.

Step 4: Bake the Dish

  • Preheat the oven to 200°C (390°F) for about 15 minutes.

  • Place the tray in the oven and bake until the fish is fully cooked and the potatoes are tender (around 30–35 minutes). Keep an eye on the top of the fish to avoid burning.


Serving

Serve hot, garnished with fresh herbs if desired, alongside white rice or fresh bread.
