Saudi Pastry with King Fish – Recipe and Preparation Method

Saudi pastry with king fish is a famous dish in Saudi cuisine and across the Gulf region. It is well known for being hearty and energy-rich, providing the body with both warmth and strength.

Saudi Pastry with King Fish

 

For the dough:

  • 350 g flour

  • 1 egg, beaten

  • 25 g full-fat milk powder

  • 5 tablespoons vegetable oil

  • 1 teaspoon salt

  • 150 ml water

For the filling:

  • 400 g king fish, cut into equal-sized cubes

  • 50 ml lemon juice

  • 30 g tamarind paste

  • 50 ml hot water

  • 150 g red onion, finely chopped

  • 6 garlic cloves, finely chopped

  • 2 chicken bouillon cubes

  • 300 g tomatoes, diced

  • 125 ml hot water

  • 1 tablespoon chili flakes

  • 50 g fresh coriander, finely chopped

  • 50 g pine nuts, chopped


Preparation Method

  1. Make the dough: Mix flour, egg, milk powder, and vegetable oil in a large bowl. Gradually add water until a smooth dough forms. Divide the dough into two equal parts, cover, and set aside.

  2. Prepare the fish: Marinate the fish cubes with lemon juice for about 30 minutes.

  3. Dissolve the tamarind paste in hot water, then strain it.

  4. Heat oil in a pan, add onions and garlic, and sauté until fragrant. Add tomatoes, chili flakes, bouillon cubes, hot water, and the tamarind sauce. Cook until the tomatoes soften, then mix in the chopped coriander. Remove from heat.

  5. Assemble the pastry: Roll out one portion of the dough on a floured surface and place it in a greased baking dish. Spread half of the tomato sauce over the dough, then add the raw marinated fish. Cover with the remaining tomato sauce and sprinkle the pine nuts on top.

  6. Roll out the second portion of the dough and cover the filling, sealing the edges. Brush the top with beaten egg.

  7. Bake in a preheated oven at 170°C (338°F) for about 30 minutes, or until the crust is golden and cooked through.
