Shakriya is a beloved dish across the Levant, particularly in Syria, where it is a staple for family gatherings, holidays, and special occasions.

What makes Shakriya unique is its creamy base of yogurt combined with tender lamb. No other type of meat can provide the same authentic flavor—lamb is essential for this dish.

It is often prepared during Ramadan, as it provides the body with warmth, energy, and nourishment after a long day of fasting.

Every 500 grams of Shakriya contains approximately 546 calories, 31 g fat, 15 g saturated fat, 19 g carbohydrates, and 46 g protein.


Ingredients (Serves 4)

Shakriya

 

  • 1 kg sheep’s yogurt

  • 500 g lamb, cut into large chunks

  • 100 g lamb fat, cut into small pieces

  • 1 egg

  • 1 tbsp cornstarch

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 large onion

  • 2 cinnamon sticks

  • 4 cardamom pods

  • 2 liters water


Preparation

  1. Cook the meat:
    Place the lamb and lamb fat in a large pot. Add water, the chopped onion, cinnamon sticks, and cardamom. Bring to a boil over high heat.

    Reduce the heat and simmer until the meat becomes tender. Add salt, cover, and allow the flavors to blend fully.

  2. Prepare the yogurt mixture:
    In another pot, whisk together the yogurt, egg, cornstarch dissolved in ¼ cup water, and a pinch of salt until smooth.

    Place the pot over high heat, stirring continuously in a circular motion until the yogurt begins to boil.

  3. Combine meat and yogurt base:
    Once the yogurt boils, stop stirring. Add two cups of the meat broth to the yogurt, stir gently, then add the cooked lamb pieces. Let the mixture simmer together over low heat for 5–10 minutes.

    Season with black pepper.

  4. Serve:
    Pour the Shakriya into deep serving bowls and serve hot, often with rice on the side.
