Shish Barak with Yogurt – Recipe and Preparation Method

Shish Barak, also known as Azn al-Shayeb (“the old man’s ears”), is a beloved traditional dish across the Levant—especially in Syria—as well as in northern Saudi Arabia and the Hijaz region. It is a dish with deep popularity and cultural roots in these areas.

The origins of Shish Barak trace back to Turkey, where the name literally means “closed dough.” The dish consists of small dumplings filled with finely minced lamb, shaped like little ears, then cooked in a creamy yogurt sauce.

It is both hearty and nourishing, made with flour, yogurt, and meat—all essential ingredients that provide warmth and energy.

Ingredients (Serves 4)

Shish Barak with Yogurt

 

  • 500 g plain yogurt

  • 1 egg yolk, beaten

  • 2 tablespoons cornstarch dissolved in the egg yolk with 125 ml water

  • 2 garlic cloves, crushed

  • ¼ cup finely chopped coriander

  • 2 chicken bouillon cubes

  • 1 teaspoon ground white pepper

  • 500 g ready-made Shish Barak dumplings


Preparation Method

  1. Place the yogurt in a large pot. Add the bouillon cubes and the cornstarch mixture, stirring until everything is well combined.

  2. Set the pot over low heat, stirring continuously in one direction until the yogurt begins to boil.

  3. Add the crushed garlic and chopped coriander, leave the pot uncovered, and let the mixture simmer for about 10 minutes.

  4. Meanwhile, cook the Shish Barak dumplings separately over high heat until golden and fully cooked.

  5. Transfer the cooked dumplings into the prepared yogurt sauce. Stir gently to combine.

Serve hot in bowls and enjoy the rich, comforting flavor of this traditional dish—a true Levantine classic.
