Spanish Omelette – Tortilla Española Recipe & Preparation
Welcome to today’s dish! We’re preparing the classic Spanish omelette, or tortilla española, one of Spain’s most famous side dishes. Known for its rich flavor and simple ingredients, it is both satisfying and nutritious.
The dish relies mainly on potatoes and eggs, and is often served with salad as a complete light meal. It’s easy to make and doesn’t require much time. Let’s get started!
Ingredients (Serves 4)

½ cup olive oil (or regular oil)

500 g potatoes, peeled and sliced into thick rounds

½ cup water

Salt and black pepper, to taste

3 medium onions, sliced

6 eggs

3 tbsp fresh parsley, chopped

250 g black olives, sliced
Preparation
Step 1 – Prepare the potatoes:
Heat olive oil in a large pan over medium heat. Peel and slice the potatoes into cubes or thick rounds. Fry them in the oil for about 5 minutes. Add water, salt, and black pepper. Raise the heat to bring to a boil, then lower it and cook gently for 15–20 minutes, until the potatoes are tender. Drain and set aside.
Step 2 – Prepare the onions:
In another pan, heat a little oil and sauté the sliced onions until golden.
Step 3 – Prepare the egg mixture:
Beat the eggs in a bowl. Mix in the olives and parsley, then add the fried onions and a splash of olive oil.
Step 4 – Assemble and cook:
In an ovenproof pan or baking dish, arrange the cooked potatoes. Pour the egg mixture over them, spreading evenly. Place in the oven for about 5 minutes, or until the top turns golden.
