Strawberry and Cream Cake – Recipe and Preparation Method

Strawberry and cream cake is one of the most delightful desserts, often prepared for special occasions, gatherings, and family get-togethers. The fresh strawberries give it a refreshing and irresistible flavor that makes it a favorite at the table.

Ingredients (Serves 4)

Strawberry and Cream Cake

 

For the cake batter:

  • 4 eggs

  • 150 g powdered sugar

  • 1 teaspoon vanilla extract

  • 140 g self-raising flour, sifted

  • 50 g unsalted butter, melted

For the cream filling:

  • 400 g sweetened condensed milk

  • 1 tablespoon lemon juice

  • 340 g thick cream (or clotted cream)

  • 250 g strawberries, sliced very thin

  • ½ cup strawberry jam


Preparation Method

  1. Begin by whisking the eggs with the sugar for 6–8 minutes until the mixture becomes light and fluffy.

  2. Add the vanilla extract and whisk again to incorporate it well.

  3. Gradually fold in the sifted flour, mixing gently, then add the melted butter while continuing to combine.

  4. Pour the batter into a round baking pan that has been greased with butter and dusted with flour.

  5. Bake in a preheated oven at 175°C (347°F) for about 30–40 minutes, or until a knife inserted into the center comes out clean.

  6. Meanwhile, prepare the cream filling: heat the condensed milk in a saucepan over low heat for about 10 minutes, stirring constantly until it thickens.

  7. Remove from heat, add lemon juice and cream, mix well, and set aside to cool.

  8. Once the cake has cooled, cut it horizontally into two layers. Spread the cream mixture and strawberry slices between the layers.

  9. Finish by spreading strawberry jam over the top of the cake, garnish with extra strawberry slices if desired, and serve.

The result is a soft, fluffy, and flavorful cake—sweet, creamy, and fruity at the same time—that your guests will never forget.
