Stuffed Duck with Rice – Recipe & Cooking Method

Ingredients (Serves 6)

1 large duck (about 1.5–2 kg)

½ cup vegetable oil

5 large onions

250 g white rice (parboiled, Basmati or regular)

Fresh parsley, chopped

2 fresh lemons, cut into wedges

2 tbsp salt and black pepper (adjust to taste)

Spices: saffron, ginger, coriander, paprika

Fresh lemon juice
Preparation
Step 1 – Prepare the Stuffing
Finely slice the onions and mix them in a bowl with lemon wedges, rice, salt, black pepper, saffron, coriander, ginger, and paprika. Combine well to create a flavorful stuffing mixture. Set aside while you prepare the duck.
Step 2 – Clean and Season the Duck
Place the duck in a large bowl filled with water, vinegar, and lemon juice. Rub well and leave it for at least 1 hour to remove any blood or odor.
In a small bowl, mix the remaining spices (saffron, coriander, ginger, paprika) with salt, black pepper, lemon pieces, and a bit of oil. Rub this mixture all over the duck, inside and out, ensuring it’s well coated. Leave it to absorb the flavors for at least 10 minutes.
Step 3 – Stuff and Cook the Duck
Fill the cavity of the duck with the prepared rice-onion mixture. Tie the legs with kitchen string to keep the stuffing inside.
Place the duck in a large pot of water with onion slices and simmer until partially cooked. Then remove it from the broth and transfer to a roasting pan.
Step 4 – Roast the Duck
Preheat the oven to 180°C (350°F). Roast the duck until golden brown and fully cooked through, about 60–70 minutes, depending on size.
Serve the Stuffed Duck with Rice hot, with the aromatic stuffing inside, a side of vermicelli rice, salad, and duck broth. The result? A showstopping centerpiece with tender meat, rich flavors, and an unforgettable aroma.
