Syrian Bateresh – Recipe & Preparation Method

Syrian Bateresh is a beloved dish from the rich Syrian cuisine, well-known for its creativity in preparing both meat-based and vegetable-based meals.

From Syria, this delicious and nutritious dish spread to neighboring countries such as Lebanon, Jordan, and Palestine, and eventually became popular throughout the Arab world.

The city of Hama and its countryside are especially famous for making this dish, which offers great health benefits thanks to its nutritious ingredients. For instance, 300 grams of Bateresh provide about 89 calories, 8 grams of fat, 1 gram of saturated fat, 2 grams of cholesterol, 4 grams of carbohydrates, and 2 grams of protein.

It is a dish suitable for any time of the year. Many households prepare it frequently because it is easy to make, requires little time and effort, and its ingredients are always available in local markets.


Ingredients (Serves 4):

Syrian Bateresh

 

  • 3 eggplants, grilled and peeled

  • 1 clove of garlic

  • 2 tablespoons plain yogurt

  • 1 tablespoon lemon juice

  • 5 tomatoes

  • 250 grams finely ground beef

  • A small amount of finely chopped parsley (for garnish)

  • A small amount of pine nuts (for garnish)

  • 2 tablespoons ghee (or clarified butter)

  • Salt, to taste

  • Black pepper, to taste


Preparation:

  1. Cook the tomatoes: Wash, peel, and chop the tomatoes, then place them in a pot with salt and black pepper. Let them simmer until they boil and soften.

  2. Cook the meat: In a separate pan, sauté the minced beef in ghee, stirring continuously until fully cooked.

  3. Prepare the eggplant mixture: Grill the eggplants, peel them, then mash them well. Mix with lemon juice, crushed garlic, yogurt, and a pinch of salt until smooth and creamy.

  4. Assemble the dish: Spread the eggplant mixture evenly on a serving plate. Top with the cooked tomato sauce, then add the sautéed beef over the tomatoes.

  5. Garnish and serve: Sprinkle chopped parsley and toasted pine nuts on top for flavor and decoration.
