Syrian Eid Cookies – Recipe and Preparation Method
Syrian Eid cookies (Ka‘k al-Eid) are among the most beloved and traditional Syrian sweets, especially prepared and served during the Eid al-Adha and Eid al-Fitr holidays. Their history goes back to ancient times, making them one of the region’s heritage dishes.
These cookies are popular across the Levant, and each household or region adds its own unique touch to the recipe. They are known for being rich in calories, providing plenty of energy, which helps people work for longer hours. They are also light and crumbly, making them easy to enjoy for children and the elderly alike.
Ingredients for Syrian Eid Cookies

4 cups fine white flour

1 cup melted ghee

½ cup corn oil

2 cups fine sugar

1 cup milk

3 eggs

2 teaspoons vanilla extract

3 teaspoons baking powder

2 tablespoons sesame seeds

1 tablespoon anise seeds

½ tablespoon black cumin seeds (nigella)

1 tablespoon ground cinnamon
Method of Preparation

Sift together the flour, baking powder, vanilla, cinnamon, sesame seeds, and black cumin seeds. Place in a large mixing bowl and combine well.

In another bowl, mix the yeast, milk, and sugar. Let it rest for about 10 minutes to activate. Add the eggs, oil, and melted ghee, stirring until all ingredients are well blended.

Gradually add the dry mixture to the wet mixture, stirring constantly until you form a soft dough.

Place the dough in a bowl, cover it, and let it rest for about one hour. Some prefer to leave it overnight for a deeper flavor.

Once the dough has rested, divide it into equal portions and roll each into a ball. Flatten slightly into discs, sprinkle with sesame seeds, and place on a baking tray greased with a little corn oil to prevent sticking.

Bake in a preheated oven at medium heat for about 20 minutes, or until golden brown.

Remove from the oven, let cool completely, then arrange on serving plates and present to guests to enjoy the wonderful taste of Syrian Eid cookies.
