Syrian Sayyaleh – Recipe and Preparation Method
Syrian Sayyaleh is a traditional and simple dessert, well-loved for its delicious taste and rich flavor.
It is one of Syria’s heritage sweets, dating back to ancient civilizations that flourished in the region. The cities of Hama and Aleppo are considered its original homeland.

Ingredients for Syrian Sayyaleh (Serves 6)

1 ½ cups semolina

1 cup flour

1 tablespoon instant yeast

1 tablespoon baking powder

2 cups warm water

A small amount of butter

Sugar, honey, or cream (ashta) for topping (any one or a mix, depending on preference)
Method of Preparation

Prepare the batter by mixing semolina with flour, then add yeast and baking powder. Gradually pour in the warm water while stirring until you get a smooth, runny batter with no lumps.

Let the batter rest for about 30 minutes to ferment and rise slightly.

Heat a flat griddle or large flat frying pan. Traditionally, a special shallow plate is used. Pour the batter from a coffee pot or jug onto the hot surface, spreading it into a thin circular shape.

Cook until the bottom turns golden, then remove it carefully. Repeat until all the batter is used.

In the same pan, melt some butter. Place each Sayyaleh disc on the butter briefly, flipping it on both sides.

Remove and top with sugar, honey, or cream according to taste. Serve warm to the family and enjoy this authentic Syrian treat.
