Syrian Sfiha – Recipe & Preparation Method

Syrian Sfiha is one of the most famous and beloved dishes in Syrian cuisine. While it is especially popular in Syria, it has also spread across the Arab world, gaining fans everywhere.

It is often prepared for trips, work, or travel because it is easy to store, pack, and carry.

Nutritionally, this dish is rich in calories, carbohydrates, monounsaturated fats, cholesterol, and a high amount of animal protein. This makes it a hearty, well-balanced meal. Thanks to the inclusion of red meat, it helps strengthen bones, build muscles, and support the immune system.


Ingredients (Serves 6)

Syrian Sfiha

 

For the dough:

  • 4 cups flour

  • 1 tablespoon powdered milk

  • ½ teaspoon salt

  • 1 tablespoon plain yogurt

  • 1 tablespoon instant yeast

  • 1 tablespoon sugar

  • 1 cup warm water

For the filling:

  • 1 kilogram ground beef (finely minced)

  • 4 tomatoes, peeled and chopped

  • 1 green bell pepper, finely diced

  • 1 large onion, finely chopped

  • ½ tablespoon pomegranate molasses

  • 2 tablespoons plain yogurt

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 teaspoon mixed spices

  • 1 teaspoon tomato paste


Preparation Method

  1. Prepare the dough:
    In a bowl, mix the dry ingredients first. Then add the oil, yogurt, and warm water gradually, kneading until the dough becomes soft and smooth. Cover the dough and let it rest for about one hour until it rises.

  2. Prepare the filling:
    While the dough is rising, boil the minced meat in water for about 5 minutes. Drain, then mix it with the chopped onion, green pepper, tomatoes, tomato paste, yogurt, pomegranate molasses, and spices (salt, pepper, mixed spices). Stir well until all ingredients combine into a uniform filling.

  3. Shape the sfiha:
    Divide the dough into small balls. Roll each ball into a thin, round (or oval) shape. Spread a layer of the meat mixture evenly on top.

  4. Bake:
    Arrange the prepared sfiha on a baking tray. Place the tray in a preheated oven and bake until the dough is cooked and the topping is done.

  5. Serve:
    Once baked, arrange them on a plate and serve warm for the family to enjoy the authentic Syrian flavor.
