Turkish Chicken Pie – Recipe & Preparation
Turkish chicken pie is a delicious and hearty dish from Turkish cuisine, one of the most famous and admired cuisines worldwide. Known for its rich variety of flavorful dishes, the Turkish kitchen has given us many iconic meals, and this savory pie is among the most beloved.

Ingredients (Serves 4)
For the filling:

1 whole chicken, boiled and shredded

2 cans mushrooms, sliced

1 bell pepper, diced

1 onion, chopped

2 garlic cloves, minced

1 tsp salt

½ tsp black pepper

½ tsp mixed spices

A pinch of nutmeg

A pinch of paprika

½ cup cheddar or mozzarella cheese
For the dough:

5 cups flour
-
5 tbsp milk powder
-
1 tbsp yogurt
-
1 egg
-
3 tsp baking powder
-
¾ cup vegetable oil
-
1 ½ cups lukewarm water
For the topping:

1 egg (for brushing)
-
A small amount of instant coffee (mixed with the egg for color)

Sesame seeds
Preparation

Make the filling:
In a pan, sauté the onion and garlic in a little oil until soft. Add the bell pepper, then season with salt, black pepper, paprika, nutmeg, and mixed spices. Stir well.Add the mushrooms, cook briefly, then mix in the shredded chicken. Combine well and set aside.

Prepare the dough:
In a large bowl, mix the flour, milk powder, baking powder, yogurt, egg, oil, and lukewarm water. Knead until smooth and elastic. -
Assemble the pie:
Roll out the dough and place it into a greased baking tray dusted with flour to prevent sticking. Spread the chicken mixture evenly inside, then sprinkle cheese over the filling.Fold or cover with another layer of dough, sealing the edges. Brush the surface with a mixture of beaten egg and instant coffee, then sprinkle sesame seeds on top.

Place in a preheated oven and bake until golden brown and fully cooked. -
Serve:
